B'Cubs® Fresh Spring Rolls

Ingredients:
For the spring rolls:
- 8-10 rice paper wrappers (8-inch round)
- 4 oz rice vermicelli noodles, cooked and cooled
- 1 cup cooked shrimp, chicken, or tofu (optional—can keep vegetarian)
- 1 cup shredded lettuce or cabbage
- 1 large carrot, julienned into thin matchsticks
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- Fresh herbs: cilantro, mint, and/or basil leaves
- Optional: avocado slices, mango slices, or bean sprouts
For dipping:

Instructions:
1. Prep your ingredients:
Cook the rice noodles according to package directions, then rinse with cold water and drain. Cut all your vegetables into thin strips or matchsticks so they're easy to roll. Arrange everything on a large plate or cutting board so it's ready to assemble.
2. Set up your rolling station:
Fill a large shallow dish or pie plate with warm water. Have a clean, damp kitchen towel or cutting board ready for rolling.
3. Soften the rice paper:
Dip one rice paper wrapper into the warm water for 5-10 seconds, just until it starts to soften. Don't leave it in too long or it'll get too sticky. Lay it flat on your damp towel or board.
4. Fill the spring roll:
On the lower third of the rice paper (closest to you), layer a small handful of noodles, a few pieces of protein (if using), vegetables, and a few herb leaves. Don't overfill—less is more when you're learning to roll.
5. Roll it up:
Fold the bottom edge of the rice paper up and over the filling. Fold in the left and right sides like you're wrapping a burrito. Then roll it up tightly toward the top edge, keeping the filling snug as you go. The rice paper will stick to itself and seal.
6. Repeat:
Continue with the remaining wrappers and fillings. Keep finished rolls covered with a damp towel so they don't dry out.
7. Serve:
